  • From bottle dated December 2014. Red wax on top.

    Pours clear with an inch of off-white foam; large bubbles. Retention is below average but this style usually hang out a long time, leaving only a ring on the edges. Sporadic, juicy lacing that seeks level.

    Aroma is funky and sour. No much, if any malt profile. Light barnyard scents waft in late behind the sharp, fizzy sourness. As it warms wine barrel pops up, tinging the nostrils with larger and larger wine character.

    Lactic acid and funk build in the finish. They both linger but the barnyard funkiness seems to linger longer, becoming a bit dominate. Just like the nose, the nose begins to beacon the taste buds. The funk and sour are at a nice level here: enough to add character but not pulling the enamel off the teeth.

    Light body, possibly more brought on by the large amounts of fine bubbled carbonation that builds through to the finish.

    The beer needs to be a bit warmer to really shine. The wine character that peeks out adds an interesting complexity, pushing the beer to the next level that the beer doesn't have cold. Solid offering that has held up to cellaring. Enjoy!

  • Three-part collaboration with Jester King Brewery and Brasserie Trois Dames, this beer was fermented with Crooked Stave's house culture of wild yeast and bacteria, all three breweries used an identical base recipe and aged the beer in the same style of Spanish Sherry Barrels.
