  • From batch number 2. Bottled 2/16/2017. Number of cases: 200. Sent from my cousin in Cali.

    Pours (crystal) clear but with a slight red tint making a pale gold beer look gold. A couple of fingers of snow white foam covers. Good retention. Lacing throughout.

    Aroma of perfumed strawberries mix with acidity. Sweet notes blend nicely with a big oak backbone. Earthy, wild funk.

    Taste is sweet up front that is overwhelmed quickly by acidity. Lingering oak and acid. Strawberries are hard to find in the taste.

    Carbonation is big here and fine. Body is medium, maybe. Can't believe there is much residual sugar.

    The oak really comes through in this beer, which is something I always appreciate. I have to admit that strawberries are not my favorite but are well done in the aroma, I wish they would come through more on the palate. Enjoy!

  • We searched high and low for the perfect strawberry to add to our wild ale. We were not satisfied with the fruit aroma and flavor until we discovered a unique variety from Oregon. It’s bright red flesh, sweet perfume and wild strawberry character is the perfect match for our beer, Champs de Fraises (Strawberry fields). A generous dose of strawberries were allowed a tertiary fermentation with a wheat beer matured 15 months in 100% French oak barrels. A fresh sweet strawberry perfume gives way to earthy funk, bracing acidity and malt undertones. A lively carbonation and underlying oak tannins create a thoroughly refreshing beverage.
