Azacca was bred in Washington by the American Dwarf Hop Association, renamed to Latitude 46, with parentage of Toyomidori (Northern Brewer Grandmother and USDA 64103 Grandfather) and ADHA 94/95 (Summit Grandmother and ADHA 99-25 Grandfather). It is named for the Haitian god of agriculture. Azacca is a great late and/or dry hop. The sustained profile for the aroma situates to that usage. Whirlpooling brings out the juicy flavor and sweet aroma.

Cascade

Cascade was released in 1972 by the United States Department of Agriculture in Oregen, it is named for the Northwest mountain range. Primarily developed at Oregon State University East Farm in Corvallis. Cascade is a cross between Fuggle and Serebrianka (Russia) and open pollinated in 1955. Cascade is the first superstar of American hops and paved the way for bold hops in today's brewing scene. The ratio of alpha to beta acids is similar to European aroma hops.

Centennial

Released in 1990, Centennial's genetics is 75% Brewer's Gold as well as Fuggle, East Kent Golding, and Bavarian hops. The male parent is the same as that of Nugget. Typically referred to as "Super Cascade". Centennial offers more bittering potential and an overall bigger profile than Cascade. Centennial was developed in 1974 by S.T. Kenny and C.E. Zimmerman. Galena

Galena stands as a historic milestone in American viticulture, representing the first true "super-alpha" commercial success story engineered by United States Department of Agriculture. Developed from an open-pollinated seed collection of the legendary British cultivar Brewer's Gold, this robust variety was selected in 1968 by Dr. Richard R. Romanko in Idaho before its official commercial launch in 1978. Engineered specifically to maximize bittering efficiency during a period of massive industry transformation, Galena single-handedly proved that domestic breeding programs could outpace traditional European imports in raw analytical output. For decades, its aggressive agricultural resilience, heavy yield potential, and highly predictable performance crowned it the most widely planted bittering hop in the country, securing its legacy as an indispensable, hard-working backbone for regional and macro-breweries worldwide. The profile of Galena presents a classic, unapologetically assertive expression of old-school Pacific Northwest terroir that surprises with its hidden depth. Driven by an exceptionally high concentration of myrcene oils balanced against a lower humulene fraction, its upfront aromatic blueprint delivers a sharp, clean punch of dark fruit, heavily defined by deep blackcurrant and a pithy, sulfur-accented grapefruit peel. This intense fruitiness is grounded by a heavy, rustic foundation of resinous forest pine, warming wood notes, and a damp-earth spice line. While its raw sensory punch is decidedly bold and unrefined when used late, it mellows beautifully in the kettle, providing an ultra-clean, crisp bittering baseline that cuts effortlessly through dense, caramelized specialty malts or anchors the aggressive, hoppy structure of classic American ales.

Gargoyle®

Gargoyle® stands as a vibrant, living piece of North American brewing history, representing a remarkable commercial revival of native California Cluster stock that has been lost to time for over half a century. Rescued from wild, untamed legacy rootstock by Marty and Claudia Kuehl of Hops-Meister Farm in Clearlake, California, this proprietary heirloom cultivar traces its lineage back to the expansive acreage that dominated Sacramento and Lake County viticulture in the late 19th and early 20th centuries. While classical historic Cluster lines eventually fell out of favor due to shifting commercial preferences, Gargoyle® emerged from the past as a distinct, superior clonal mutation. Nurtured in sun-drenched, lower-latitude soils, this unique hop allows brewers to explore an authentic piece of pre-prohibition agriculture that inherently carries a remarkably loud, contemporary fruit profile. The profile of Gargoyle® masterfully bridges the gap between old-school heritage structure and new-school tropical character, offering a highly unique sensory experience. While it shares the robust, resinous wood-and-pine foundation of traditional American landraces, its essential oil fingerprint showcases a distinct top-note heavily dominated by ripe, fleshy mango, sweet citrus peel, and crushed floral botanicals. Rather than offering a simple, singular rustic note, it delivers a loud, bright, and multi-dimensional bouquet that feels shockingly modern. This expressive aromatic profile allows Gargoyle® to easily slice through complex, heavy specialty grain bills or seamlessly anchor aggressive, dry-hopped West Coast ale styles without ever getting lost in the mix.

Glacier

Glacier stands as a masterfully bred, dual-purpose Pacific Northwest cultivar engineered for structural refinement and exceptional brewing utility. Released in 2000 by Dr. Stephen Kenny through Washington State University and the United States Department of Agriculture, its pedigree is a fascinating global hybrid tapestry; its mother is the classic French aroma landrace Elsasser, and its broader lineage weaves together a powerhouse ancestry of Brewer's Gold, Northern Brewer, Bullion, and East Kent Golding. Developed to offer American growers an agriculturally robust, high-yielding alternative to fragile European noble imports, Glacier successfully unites local farm-level vitality with old-world sensory elegance. Prized heavily for its remarkably low cohumulone content, it delivers an ultra-smooth bitterness that has made it a cherished favorite among craft brewers looking for a delicate, fruit-accented alternative to aggressive, modern high-alpha varieties. The profile of Glacier offers a beautifully nuanced and multi-layered sensory experience that departs completely from the intense, resinous pine notes typical of many domestic hops. Its essential oil fingerprint is defined by a soft, harmonious bouquet of sweet orchard fruits, notably ripe apricot and fresh peach, layered gracefully over a crisp foundation of lemon zest and freshly cut cedar wood. Underneath this bright, fruit-forward presentation sits a grounding, earthy green tea element that pays subtle homage to its European heritage. This sophisticated, low-impact aromatic array makes Glacier an incredibly flexible tool in the brewhouse, allowing it to seamlessly brighten up light, crisp session ales or layer complex, rounded depth into rich, chocolatey, and caramelized specialty grain bills.

Hallertau Blanc

Hallertau Blanc is a spectacular, sophisticated triumph of modern German hop breeding that completely redefines what continental hops can bring to the brewhouse. Officially released in 2012 by the famous Hop Research Center in Hüll, Germany, this groundbreaking aroma variety features a direct lineage of American Cascade. However, rather than repeating the heavy grapefruit punch of its parentage, Hallertau Blanc adapted beautifully to its European terroir, trading sharp citrus for an incredibly elegant, wine-like fruit profile. Engineered specifically to meet the global craft market's craving for bold, "New World" personality, its unique profile shines brightest when used in whirlpool and dry hopping, delivering a pristine, fruit-forward performance anchored to the flawless agronomic dependability of traditional German cultivation. The profile of Hallertau Blanc is a genuinely stunning, multi-dimensional masterpiece that mirrors the complex sensory elegance of a fine, dry white wine. It leads with a loud, highly distinct primary bouquet of fresh Sauvignon Blanc grapes, sweet passionfruit, and sliced lemongrass, followed quickly by a sophisticated secondary layer of white peach, crushed gooseberry, elderflower, and a faint, cleansing whisper of resinous pine. Strikingly unique and completely removed from the heavy, unpleasantly dank or garlic-forward traits that can plague over-processed tropical varieties, Hallertau Blanc maintains an immaculate clarity of fruit. On the tongue, it behaves with absolute grace, offering a soft, transparent flavor and a highly fleeting bitterness that leaves the palate feeling crisp, dry, and incredibly refreshed.

Hallertauer Taurus

Hallertauer Taurus is an absolute titan of modern German hop breeding, combining the brute bittering muscle of a high-alpha workhorse with the refined aromatic soul of a classic continental variety. Developed in Hüll, Germany, and released in 1995 by the Hop Research Center, this powerhouse counts the legendary Magnum among its direct ancestors. True to its astrological namesake, Taurus displays immense agricultural strength in the field, yielding heavy, resin-packed bines that effortlessly resist regional diseases. While it was engineered to maximize early-kettle processing efficiency for large-scale breweries, its surprisingly high oil content and low cohumulone levels have made it a favorite for craft brewers who demand pristine structural bitterness and subtle, clean aromatics. The profile of Hallertauer Taurus delivers a robust, deeply satisfying, and sophisticated arrangement of dense forest evergreens, earthy spice, and bright zesty fruit. It commands attention with a prominent primary bouquet of fresh pine needles, cracked pepper, and aromatic wood, which is cut cleanly by an unexpected secondary surge of sweet cantaloupe melon, dried sage, and a high-linalool [tag]floral/[tag] freshness. Free from the unpleasantly heavy, garlic, or sulfurous tones that can plague lesser high-alpha varieties, Taurus maintains an immaculate level of purity. On the palate, it delivers an incredibly clean and crisp bitterness, laying down a rock-solid, smooth foundation that perfectly balances rich, bready malts or lets late-stage dry hops shine without causing palate fatigue.

Harlequin®

Harlequin® represents a thrilling, revolutionary leap forward for British hop breeding, completely shattering the old stereotype that UK hops are limited to subtle, earthy tones. Developed by Charles Faram in the United Kingdom under their elite Hop Development Programme and officially released commercially in 2019, this proprietary standout features a pedigree derived directly from Godiva. It earns its playful name from the stunningly distinct, intricately patterned bracts that decorate its heavy cones. Engineered to give brewers a sustainable, locally grown alternative to imported New World varieties, Harlequin® delivers a massive, high-impact sensory punch that draws frequent comparisons to Mosaic®, firmly establishing the UK on the modern, hop-forward craft map. The profile of Harlequin® is a masterclass in vibrant fruit intensity, bursting with a bold, New World personality while retaining a refined hint of clean British structure. It opens with an unmissable, juicy rush of sweet passionfruit, ripe yellow peach, and fresh pineapple chunks. Beneath this primary tropical canopy lies a brilliant secondary layer of bright citrus zest, sweet mango, and a distinct hint of bitter orange marmalade. Free from any unpleasantly heavy, garlic, or overly dank characteristics, Harlequin® brings an incredible clarity of fruit flavor to the glass. It is the definitive headline selection for brewers seeking a distinct, sweet-fruit edge in late-addition and dry-hopped beers.

Hartwick

Hartwick is a proprietary variety owned by [farm]Great Lakes Hops[/faarm] that stands as a direct descendant of the acclaimed Michigan Copper. Named in honor of Hartwick Pines State Park—famed for its majestic old-growth timber—this variety was engineered to display a rugged, towering presence in the hop yard, built to withstand the intense climate swings and high humidity of the Great Lakes region. However, it is currently still considered a field plant and is not yet ready for widespread commercialization due to ongoing pest issues. For craft brewers participating in field trials, Hartwick provides a potent combination of clean, high-alpha dual-purpose capability and an explosive fruit-forward oil profile that easily rivals the most famous varieties of the Pacific Northwest. The profile of Hartwick is a bold, intensely saturated arrangement of tropical stone fruits, sweet orchard candy, and refreshing forest evergreens. It charges forward with a vibrant primary bouquet of ripe pineapple, fleshy mango, and sweet honeydew melon, followed swiftly by a sophisticated secondary layer of red berries, candied orange peel, and a distinct, clean whisper of fresh white pine. Entirely free from the heavy, unpleasantly dank or garlic undertones that can plague over-processed hops, Hartwick maintains an immaculate sense of fruit clarity. On the palate, it delivers a sturdy, beautifully integrated bitterness that slices cleanly through heavy grain bills, making it the definitive choice for designing deep, intensely juicy IPAs that demand a crisp, structured finish.

Horizon

Horizon is a true "Renaissance hop" of the Pacific Northwest, blending the sheer power of a high-alpha variety with the refined elegance of a classic aroma cultivar. Bred at Oregon State University by the United States Department of Agriculture in 1970 and eventually released in 1998, it is a half-sister to Nugget, sharing the same mother (USDA 65009) and a lineage that includes Brewer’s Gold and Early Green. Horizon is most famous for containing one of the lowest cohumulone levels of any hop—a trait typically reserved for European noble varieties. This unique chemical makeup allows it to deliver a firm, structural bitterness that remains remarkably clean, smooth, and free of harshness, making it a favorite for brewers who demand technical precision from their "workhorse" hops. The profile of Horizon is a pleasant and well-balanced arrangement of classic American citrus and traditional herbal spice. It leads with a primary bouquet of sweet lemon zest and floral blossoms, followed closely by a secondary layer of black pepper, hay, and a faint, woody earthiness. Unlike aggressive or "dank" modern hybrids, Horizon is defined by its aromatic clarity and "bright" freshness. On the palate, the bitterness is incredibly transparent, acting as a supportive frame for the malt without ever becoming astringent. It is the definitive choice for brewers seeking a multi-dimensional hop that provides a polished, professional finish to everything from traditional lagers to clean, hop-forward ales.

HS Grove

HS Grove is a precision-engineered aromatic powerhouse added to the BSG Hop Solutions Program in 2023. Designed specifically to capture the essence of a sun-drenched citrus orchard, this proprietary blend is the result of intensive sensory research, combining the most vibrant citrus-forward varieties from the Pacific Northwest into a single, consistent product. It was created for brewers who demand "New World" aromatic saturation without the year-to-year variability often found in single-farm cultivars. As an "aroma-first" ingredient, HS Grove excels in whirlpool and dry-hop applications where clarity of fruit and refreshing brightness are the primary goals for modern, hop-forward styles. The profile of HS Grove is an assertive and bright arrangement of zesty citrus and lush tropical fruits. It leads with a dominant primary bouquet of pink grapefruit, sweet tangerine, and lemon zest, followed closely by a secondary layer of orange marmalade and a whisper of tropical stone fruit. Unlike resinous or "dank" varieties, HS Grove remains strictly focused on "clean" fruit aromatics. On the palate, the experience is incredibly refreshing, offering a "juicy" citrus sensation that remains vivid from the first sip to the finish. It is the definitive choice for brewers seeking a high-intensity, citrus-dominant hop blend that emphasizes aromatic purity and effortless drinkability.

Independence

Independence is a masterfully crafted hop blend from Yakima Chief Hops, designed to capture the pioneer spirit of the Pacific Northwest while paying homage to the legacy of independent family farms. Unlike single-variety hops that may fluctuate with each harvest, this blend is curated to provide a consistent, "old-world meets new-world" aromatic experience. It acts as a bridge between tradition and innovation, merging a rugged, herbal foundation with the vibrant, spirited citrus notes that define the American craft revolution. It is a reliable, aroma-focused choice for brewers who value consistency and a nuanced, multi-layered hop character in their flagship ales and lagers. The profile of Independence is a refined and nostalgic journey through a classic American hop garden. Avoiding the aggressive "fruit-bomb" intensity of modern hybrids, it opts instead for a sophisticated bouquet of fresh-cut grass, dried tobacco leaf, and earthy pine. These grounded base notes are brightened by secondary layers of sweet floral blossoms, lemon zest, and a touch of stone fruit. On the palate, the experience is incredibly smooth; the deliberate focus on aroma over heavy bittering ensures a gentle finish that allows the complex, herbal-citrus characteristics to lead. It is the perfect selection for creating "crushable" session beers that demand a clean, professional, and deeply traditional American finish.

Kazbek

Kazbek is a powerful evolution of the Czech brewing tradition, often referred to as "Super Saaz" for its intensified aromatic capabilities. Developed at the Hop Research Institute in Žatec and released in 2008, this variety was born from a cross between the noble Saaz and a wild seedling found in the rugged Caucasus Mountains—sharing a genetic spirit similar to the American Cascade. Named after the towering Kazbek peak, it possesses the legendary finesse of the Old World but with a "wild" heart, thriving with a physical vigor that traditional noble hops often lack. It is the definitive choice for brewers who want the soul of a classic pilsner but with a modern, punchy aromatic lift that stands up to contemporary craft standards. The profile of Kazbek is a complex and spirited arrangement of bright citrus and earthy spice. It leads with a primary bouquet of lemon zest, sweet grapefruit, and fresh lime peel, followed closely by a sophisticated secondary layer of white pepper, spicy noble herbs, and a hint of wild mint. Because of its unique Caucasian heritage and high farnesene content, it provides a "zesty" aromatic clarity that is remarkably refreshing and vivid. On the palate, the bitterness is clean and structural, allowing the bright citrus notes to harmonize with a lingering, earthy finish. It is the premier choice for brewers seeking a bold, multidimensional hop that bridges the gap between traditional European elegance and modern craft intensity.

Legacy®

Legacy® is a fascinating "wildcard" variety that brings a sense of history and discovery to the modern brewhouse. While it has been grown since 1963, it was officially registered by Hops Direct in 2013 and is grown exclusively at Puterbaugh Farms. Discovered as a unique seedling on Roy Farms in Washington, Legacy® stands apart from today's highly engineered hybrids, offering a profile that feels both nostalgic and innovative. It is a true dual-purpose hop that bridges the gap between the rugged, spicy character of 20th-century American brewing and the sophisticated, fruit-driven demands of the current craft scene, providing a complex, multi-layered soul to any recipe. The profile of Legacy® is a rich and soulful arrangement of dark forest fruits and classic herbal spice. It leads with a primary bouquet of blackberry, blackcurrant, and wild berries, followed closely by a sophisticated secondary layer of grapefruit zest, floral lavender, and a distinct peppery earthiness. Unlike many hops that focus on a single citrus note, Legacy® offers a "saturated" berry character that remains grounded by its noble-like herbal backing. On the palate, the bitterness is firm and extremely clean, allowing the dark fruit and spicy floral notes to linger through a dry, refreshing finish. It is the definitive choice for brewers seeking to create a complex, "all-American" character with an elegant, old-world twist.

McKenzie

McKenzie is a breakthrough aroma variety that marks a new chapter for Oregon hop breeding. As the first release from the West Coast Hop Breeding Company, it represents five years of meticulous development aimed at harnessing the unique terroir of the Willamette Valley. The variety is named after the McKenzie River—the same waters where the lead breeder grew up fishing. Initially hitting the market in 2021, this high-impact cultivar stands out for its massive oil concentration and a "saturated" fruit profile that rivals the world’s most famous proprietary hops. It offers a distinct regional personality, combining a classic American citrus backbone with a modern, jammy intensity. The sensory profile of McKenzie is a radiant and dense arrangement of sweet citrus and dark stone-fruit preserves. Its character is highly versatile: when used in the boil, it leans into a bold pine and resin forward profile; however, post-boil additions unlock its vibrant fruitiness. It leads with a primary bouquet of grapefruit zest, lemon candy, and ripe melon, followed by a sophisticated secondary layer of nectarine, apricot, and a hint of forest-pine. As the profile develops, brewers often find a pleasant "jammy" sweetness reminiscent of berry preserves. Thanks to its exceptionally high oil content, it delivers a smooth, integrated bitterness and a long, fruit-saturated finish.

Millennium

Millennium is a powerhouse "Super Alpha" variety that redefined bittering efficiency upon its release at the turn of the century. Developed by Yakima Chief Ranches as a refined successor to Nugget and Columbus / Tomahawk / Zeus (CTZ), Millennium was engineered to provide brewers with massive, reliable resin content and superior agricultural yields. It is a dominant presence in the hop yards of the Pacific Northwest, producing dense, lupulin-rich cones that handle processing and long-term storage with remarkable stability. While primarily prized for its clean bittering potential, Millennium possesses a hidden aromatic depth that makes it a versatile foundational hop for high-gravity ales and robust, hop-forward styles. The sensory profile of Millennium is a bold and structural arrangement of classic resinous pine and deep herbal spice. It leads with a primary, "heavyweight" bouquet of damp earth, black pepper, and cedar, followed by a sophisticated secondary layer of resinous pine needles and a hint of dark citrus zest. As the profile develops, brewers will find a pleasant floral undertone and a substantial, "chewy" bitterness that remains clean and integrated on the palate. Thanks to its high alpha acid content and excellent humulene-to-myrcene ratio, Millennium delivers a firm, assertive bitterness and a crisp, slightly spicy finish—the definitive choice for a solid bittering foundation or a classic Pacific Northwest "dank" aromatic depth.

Mount Rainier

Mount Rainier is a sophisticated dual-purpose variety that represents a successful marriage of "Old World" elegance and "New World" performance. Developed through a collaboration between Oregon State University and the United States Department of Agriculture starting in 1994, it was officially released to the public in 2009. Its pedigree is a bridge between continents: a cross between the high-alpha Magnum and a USDA male (with Hallertau Mittelfrüh and Galena in its lineage). Specifically engineered to elevate the classic "Noble" hop profile, Mount Rainier provides the delicate floral finesse of German varieties alongside the resin-rich vigor of American hops. While commercial production has largely ceased, it remains a legendary choice for those seeking a "Noble-plus" aesthetic. The sensory profile of Mount Rainier is a graceful and layered arrangement of sweet meadow blossoms and cooling herbal spice. It leads with a primary, "meadow-fresh" bouquet of dried lavender, wildflower honey, and fresh-cut hay, followed by a sophisticated secondary layer of citrus zest, licorice, and a hint of minty pine. As the profile develops, brewers will find a pleasant earthy "snap" and a subtle nuttiness that remains exceptionally clean on the palate. Thanks to its remarkably low cohumulone levels and balanced alpha-to-beta ratio, Mount Rainier delivers a soft, rounded bitterness and a crisp, polished finish—the definitive choice for adding aromatic depth to everything from delicate lagers to robust porters.

Nugget is a foundational heavyweight of the American hop industry, representing the first generation of "Super Alpha" hops that revolutionized craft brewing. Developed by the United States Department of Agriculture in Corvallis, Oregon starting in 1970 and released commercially in 1983, Nugget was bred to satisfy the demand for an efficient, high-intensity bittering hop. Its pedigree is a complex "mutt" of heritage varieties, including Brewer's Gold, Early Green, East Kent Golding, and Bavarian. While it carries the aggressive genetics of its Brewer's Gold parentage, Nugget is prized for its exceptionally low cohumulone levels, ensuring a smooth, polished bitterness that lacks the harsh edges of other high-alpha varieties. The sensory profile of Nugget is a robust and sophisticated blend of woodsy resin and savory herbs. It leads with a primary, "forest-floor" bouquet of fresh pine needles, ginger, and damp earth, followed by a surprising secondary layer of sweet pear, pineapple, and light floral honey. As the profile develops, brewers will find a distinct herbal "dankness" and a hint of black pepper that provides a deep, resonant finish. Thanks to its significant oil saturation, Nugget has transitioned from a strictly early-boil workhorse to a respected dual-purpose variety, capable of establishing a sturdy, resinous foundation in everything from traditional stouts to massive West Coast IPAs.

Oktawia

Oktawia (often referred to as Octavia) is a hidden gem of Polish hop breeding that offers a fascinating departure from the standard spicy and herbal profiles of Central Europe. Originally developed in Poland as a complex cross between Brewer's Gold, Northern Brewer, and a wild hop from the former Yugoslavia, this variety was nearly lost to history. It sat on the brink of extinction until the Olimp Brewery featured it in a single-hop pale ale called Zefir, which received glowing reviews and sparked a craft renaissance for the strain. Known for its rugged adaptability and vigorous growth, Oktawia thrives in the Polish climate, producing a harvest that is technically refined yet aromatically bold. The sensory profile of Oktawia is a crisp and refreshing arrangement of summer fruits and garden aromatics. It leads with a primary, "cool" bouquet of sweet honeydew melon, white grape, and lime zest, followed by a sophisticated secondary layer of fresh-cut cucumber and wildflower honey. As the profile develops, brewers will find a gentle herbal "snap" and a subtle woody undertone that provides a clean, polished finish. Thanks to its moderate alpha acids and balanced oil composition, Oktawia delivers a smooth, unobtrusive bitterness and a saturated aromatic presence. It is the definitive choice for brewers seeking to impart a unique, "garden-fresh" fruitiness typically sought in modern Pacific cultivars.

Opus

Opus is a masterful aromatic symphony designed to provide brewers with a balanced and multi-dimensional "New World" hop experience from a classic source. Developed as a sister to the Emperor® variety in the United Kingdom by Charles Faram, this hop was initially bred in 2013 and released commercially in 2016. While many British varieties lean toward traditional spice and earth, Opus focuses on a specific chemical fingerprint that delivers the saturated tropical profile often associated with modern hybrids. It is a premier choice for brewers who demand a complex, layered hop presence that can serve as the primary aromatic driver in fruit-forward styles while benefiting from a polished and consistent character. The sensory profile of Opus is a sophisticated arrangement of vibrant tropical fruit and bright, refreshing citrus. It leads with a primary, "saturated" bouquet of ripe pineapple, mango, and passionfruit, followed by a secondary layer of zesty lime and sweet grapefruit. As the profile develops, brewers will find a refined herbal "dankness" and a subtle floral undertone that adds a crisp, professional edge. Because of its remarkably low cohumulone levels and high essential oil saturation, Opus shines specifically in late additions. It delivers a smooth, non-clashing bitterness and a lush, "fruit-salad" finish that stands out even in complex malt bills.

Orange Sunrise®

Orange Sunrise® is a masterfully curated aromatic powerhouse designed to deliver a high-definition citrus experience. Bred at Monhopoly Hop Breeding in New Zealand, this variety boasts a global pedigree, descending from a United States male and a United Kingdom female plant. This "best of both worlds" lineage results in a robust fruit profile that has become a definitive tool for the "new school" of craft brewing. Unlike many single-origin varieties, Orange Sunrise® is celebrated for its remarkable consistency, ensuring that every batch provides the same saturated, sun-drenched character. It is an ideal choice for brewers looking to push the boundaries of fruit-forward profiles through hops alone, offering a reliable, vibrant presence that defines modern aromatics. The sensory profile of Orange Sunrise® is a vivid, multi-layered celebration of everything citrus. It leads with a primary, "saturated" bouquet of freshly squeezed orange juice, sweet clementine, and tangerine zest, followed by a sophisticated secondary layer of tropical apricot and soft floral honey. As the profile develops, brewers will find a bright, candy-like sweetness and a subtle hint of herbal spice that remains exceptionally clean on the palate. Thanks to its remarkably low cohumulone levels and high essential oil saturation, Orange Sunrise® delivers a soft, non-clashing bitterness and a lush finish—making it the perfect fit for high-impact pales and India pale ales.

Palisade®

Palisade® is a standout proprietary variety that represents a sophisticated evolution of the classic noble hop. Developed by Yakima Chief Ranches, this variety is believed to be of Tettnanger descent, bred to offer the refined elegance of European hops with the high-performance yields and essential oil concentration of the Yakima Valley. Palisade® is widely recognized for its incredible versatility and its distinct "non-clashing" character, allowing it to integrate seamlessly into a wide range of malt bills. It is a favorite among craft brewers who require a reliable aroma hop that provides a lush, saturated presence without the sharp, aggressive edge often associated with high-alpha American cultivars. The sensory profile of Palisade® is a harmonious blend of soft fruit, delicate flowers, and earthy spice. It leads with a primary, "orchard-fresh" bouquet of apricot, nectarine, and sweet grass, followed by a sophisticated secondary layer of dried herbs and wildflowers. As the profile develops, brewers will find a pleasant, woody earthiness and a subtle hint of citrus that remains incredibly smooth on the palate. Thanks to its balanced chemical composition and moderate alpha levels, Palisade® delivers a clean, gentle bitterness and a crisp finish, making it the definitive choice for imparting a multi-dimensional, "all-day" aromatic depth to sessionable styles.

Sterling

Sterling is a masterful American aroma hop that brings the legendary refinement of the Old World into the modern era. Developed by the United States Department of Agriculture breeding program in 1990 and officially released in 1998, Sterling was specifically engineered to be a domestic successor to the classic Czech Saaz, which at the time suffered from unreliable availability. Researchers created this "complex" variety (some might call it a high-bred mutt) by crossing Saaz (50%) with Cascade (25%), Brewer's Gold, and Early Green. This pedigree allows Sterling to possess the delicate "Noble" characteristics of its ancestors while offering the improved vigor and resin content of American cultivars. It has become a cornerstone for craft brewers who require a clean, sophisticated aromatic profile for traditional lagers, proving that domestic hops can achieve a level of elegance equal to the finest European landrace varieties.

Taiheke®

Taiheke® is a remarkable case study in how geography can redefine a hop’s genetic destiny. While it began its journey as the classic American Cascade, the first commercial release from the United States Department of Agriculture program in 1972, decades of cultivation in the pristine soils of New Zealand, by New Zealand Hops Ltd, have forged a variety that is entirely its own. Bred from Fuggle and a male likely carrying Serebrianka genetics, Taiheke® has been rebranded to honor its Māori heritage and its new home on the South Island. By absorbing the unique mineral qualities and intense UV light of New Zealand, Taiheke® has evolved into a "Super Cascade." It retains the reliable brewing backbone of its American ancestor but delivers a significantly more powerful, tropical aromatic punch. It serves as the definitive bridge between 1970s American hop history and the modern, fruit-forward innovation that has made New Zealand world-famous.

Tango

Tango is a contemporary German masterpiece that represents the future of sustainable brewing. Developed at the Hop Research Center Hüll (originally known as experimental seedling 2011/02/04) and released in late 2020, it was engineered to meet two modern demands: high-impact aromatics and climate resilience. By crossing the legendary American Cascade with a German male derived from Hallertauer Tradition, Hüll researchers created a "Best of Both Worlds" cultivar. Tango possesses the deep, "Noble" roots of the Hallertau but is supercharged with the citrus-forward energy of the New World. Most importantly for the future of brewing, Tango is a "climate-tolerant" variety, requiring fewer resources and thriving in shifting weather conditions where traditional landrace hops might struggle.

Toyomidori

Toyomidori is a vintage high-alpha variety from Japan, released in 1990 by the Kirin Brewery Hop Research Farm. Bred in 1981, it was developed as a robust cross between the legendary Northern Brewer and a wild American male (USDA 64103M). Toyomidori was engineered to be the heavy-hitting bittering foundation for Japan’s iconic crisp lagers, providing high-efficiency alpha acids for large-scale production. While its commercial cultivation in Japan eventually declined due to a high sensitivity to downy mildew, Toyomidori’s DNA lives on in the modern "juice" revolution. It is the direct genetic parent of the tropical powerhouse Azacca, proving that even a "workhorse" bittering hop can pass on incredible aromatic potential to the next generation. For brewers, it represents a classic era of Japanese hop science that paved the way for the modern craft movement.

Tropica

Tropica is a "terroir-driven" marvel developed by Minnesota Axe Hops in the heart of the North Star State. While its genetic blueprint is rooted in the legendary Chinook, Tropica is a masterclass in how geography and specialized handling can completely redefine a hop's identity. What truly sets Tropica apart is the meticulous "low-and-slow" processing. By drying the hops at temperatures below 110°F–120°F, the farmers preserve the delicate, volatile oils that are usually scorched away in industrial kilns. This specialized care, combined with unique Minnesota soil, allows Tropica to shed the aggressive pine-heavy profile of its ancestors and emerge as a "clean" tropical powerhouse indigenous to the American Midwest.

Vic Secret

Vic Secret is a premier Australian aroma hop, developed by Hop Products Australia, that has become a global craft sensation since its commercial debut in 2013. Developed in the lush valleys of Victoria in 2000, this high-alpha variety is a direct sister to the legendary Topaz. While it shares the iconic tropical intensity of its cousin Galaxy, Vic Secret is prized for its more refined, "clean" aromatic profile and exceptionally high oil content. The most fascinating aspect of Vic Secret is its "personality shift" in the brewhouse. When used in the late kettle, the bright fruit often recedes, giving way to a more grounded, earthy character. However, when reserved for the whirlpool or dry-hop, its volatile oils explode with the bold, "New World" vibrancy that defines modern brewing. It is a sophisticated alternative for those who find other Australian hops too overwhelming, offering a more precise and balanced tropical impact.

Vista

Vista is a modern aromatic marvel, officially released in 2021 as a crown jewel of the United States Department of Agriculture (USDA-ARS) public breeding program in Corvallis, Oregon. Originally bred in 2006, it spent over a decade in the "Elite Line" trials, engineered to stand toe-to-toe with the most popular proprietary tropical hops on the market. Its pedigree is a fascinating blend of structural reliability and modern zest, pulling genetics from Perle, Northern Brewer, and Hallertau. What sets Vista apart is its "triple-threat" agricultural profile: it was specifically selected for massive yields, high drought tolerance, and extreme heat resistance. This makes it a sustainable hero for the future of American hop farming. As a public variety, Vista offers every brewer a world-class, high-impact aromatic profile that is accessible to all, serving as a cornerstone for the next generation of fruit-forward American craft beers.

Yakima Gold

Released in 2013 by Washington State University, Yakima Gold is a masterfully bred "American-Noble" hybrid. Its name pays homage to the world-renowned Yakima Valley, where it was developed to combine the hardy, time-tested genetics of Early Cluster with the sophisticated aromatic heritage of Slovenian Styrian Golding. For the brewer, Yakima Gold represents the best of both worlds: the vigorous growth and high oil content of a Washington-grown hop, paired with the delicate, refined bitterness typically reserved for traditional European cultivars. It is a versatile "bridge" variety that brings Old World grace to the modern American brewhouse.

Yellow Sub

Developed by the flavor experts at the BarthHaas, in Germany, Yellow Sub is a masterfully composed "Hop Creation" designed to deliver high-impact aromatics with German precision. Rather than a single variety, Yellow Sub is a proprietary blend of elite German aroma hops meticulously selected to replicate the bold, fruit-forward profile of iconic New World hops like Amarillo®. For the brewer, Yellow Sub represents the ultimate in reliability. Because it is a blend, it bypasses the flavor fluctuations often found in single-farm harvests, offering a rock-solid, year-over-year consistency. It provides the "punch" of a Pacific Northwest hop while retaining the clean, refined brewing performance that is the hallmark of German hop science.

Zamba

Formerly known as Samba, Zamba is the flagship proprietary release from the BSG Hop Solutions Program. Unlike traditional single-variety hops, Zamba is a masterfully curated blend designed to take the guesswork out of brewing high-impact IPAs. By scientifically pairing specific cultivars, Zamba ensures that your beer delivers a consistent, high-intensity aromatic profile year-round, bypassing the natural flavor swings often found in single-hop harvests. It is essentially a "one-stop shop" for tropical complexity. Zamba was engineered to cut through heavy malt bills and high-gravity mashes, providing a reliable foundation for any brewer looking to achieve a "commercial grade" fruit-forward profile in their homebrewhouse.

Zenia

While its DNA belongs to the legendary Columbus / Tomahawk / Zeus (CTZ) hop family, Zenia is far from your standard bittering hop. Cultivated by the farmer-owned Mighty Axe Hops in Minnesota, this variety is a testament to the power of terroir and specialized processing. Unlike its ancestors, which are often picked early for raw bittering power, Zenia is harvested late and aged in climate-controlled environments. This deliberate "resting" period allows the pungent, sulfurous notes often found in high-alpha hops to fade away, leaving behind a refined and complex aromatic profile. The result is a uniquely American hop that bridges the gap between old-school "dank" characteristics and modern, fruit-forward intensity. Currently difficult to source following the closure of Mighty Axe Hops in 2020.

Zythos®

Zythos® isn't your average hop, it's a "greatest hits" compilation of the West Coast craft movement. Developed by Hopunion LLC (now Yakima Chief Hops) as a proprietary blend, Zythos was engineered specifically to take the guesswork out of brewing world-class IPAs. While most hops are single varieties, Zythos is a curated "IPA powerhouse" designed for consistency and depth. For the homebrewer, it's a versatile tool that offers a bold punch of grapefruit and tangerine alongside tropical notes of pineapple. With a high enough alpha acid content to provide a clean bittering base, it’s a true dual-purpose blend that ensures your brew is as aromatic as it is balanced. Hop blending is similar to wine blending in which the sum of the parts can be more/different than the individual parts.

Did you know?
  • Dwarf variety hops grow shorter in height than traditional varieties but, importantly, produce the same yield. This combination makes harvest easier.
Explanations
  • Storage: is based on the percentage of alpha acids remaining after 6 months at 20*F.
  • Oil composition percentages are based on the total percentage of oil in the hop. Example: 10 - 20% means that for the specific oil it is 10 - 20% of the overall oil make up.
