Dolcita

Dolcita is a hop from the Hop Breeding Company. Initially known as HBC 1019cv. Surprisingly short time to release, being initially bred in 2016 by HBC using their proprietary plants, and available in 2025. Considered "a potent but pleasing mix of citrus, tropical, and stone fruits. With notes of coconut, Valencia oranges, caramelized bananas, peaches, and honeydew melon."

ProvOAK

ProvOAK is a revolutionary "concoction" from the innovators at BarthHaas, representing one of the most unique products in the brewing world. Unlike traditional varieties bred solely for floral or citrus aromatics, ProvOAK is a specialized, pelletized blend of hops and oak combined prior to the brewing process. This functional hop product was engineered to deliver the structural and flavor characteristics typically associated with months of barrel aging directly in the brewhouse. Characterized by an exceptionally high polyphenol content, ProvOAK serves as a natural, hop-derived alternative to traditional wood additions, enhancing both mouthfeel and biological stability in a single application. The sensory profile of ProvOAK is defined by its deep, rustic, and structural qualities. It leads with a primary, "barrel-forward" bouquet of toasted oak, vanilla, and subtle coconut, followed by a sophisticated secondary layer of [tag]earthy spice and dried tobacco. Unlike fruit-forward hops, ProvOAK focuses on the "base notes" of a beer, contributing smooth, velvety tannins and a perceived sweetness reminiscent of long-term maturation. Because of its unique chemical makeup, it delivers a soft, rounded bitterness that integrates seamlessly with heavy malt bills, providing a sophisticated, age-matured mouthfeel without the need for a cellar.

Sabro

Sabro is a groundbreaking American aroma hop that offers a flavor profile unlike anything else in the brewing world. Released in 2018 by the Hop Breeding Company, its distinctive character stems from a unique lineage—a cross-pollination involving a wild female neomexicanus hop from the mountains of New Mexico. This "New World" heritage makes Sabro an incredibly expressive and robust performer in the brewhouse. Prized for its exceptionally high oil content, it serves as a top-tier finishing hop that translates intense tropical characteristics remarkably well from the whirlpool to the glass, making it the definitive choice for brewers looking to push the boundaries of modern flavor. The sensory profile of Sabro is a saturated and complex tapestry of tropical, citrus, and stone fruits, famously anchored by a singular "coconut and cream" character. It leads with a primary bouquet of tangerine, passionfruit, and lime zest, followed by lush layers of coconut, cream, and vanilla. As the profile develops, brewers will find sophisticated secondary notes of cedar, fresh mint, and stone fruit. Because of its high total oil content and balanced cohumulone levels, Sabro delivers a smooth bitterness and a lingering, "juicy" aromatic impact, providing a creamy, decadent mouthfeel that defines the modern tropical beer experience.

Talus

Talus is a bold, "new-frontier" variety released in 2020 by the Hop Breeding Company. As a daughter of the world-famous Sabro, Talus inherits a fascinating and rare genetic lineage: it is an open-pollinated cross between a Sabro mother and a "local" Pacific Northwest male, carrying the rugged neomexicanus DNA of the American Southwest. This "wild" pedigree results in a plant that is both agriculturally vigorous and aromatically explosive. Talus was specifically selected for its high concentration of "survivable" hop compounds—specific oil components that are chemically designed to remain potent through the heat of the whirlpool and the activity of fermentation. For the brewer, this means an incredibly efficient way to deliver complex fruit and floral layers that stay vibrant and "saturated" from the fermenter to the final pour.

Tangerine Dream®

Tangerine Dream® is a standout proprietary variety developed by the innovators at Monhopoly Hop Breeding in New Zealand. Formally identified in the breeding program as WTD 005, this hop was born from an inspired cross between a Cascade female and a select German male. The result is a prolific, high-vigor plant that thrives in the fertile soils of the Southern Hemisphere, absorbing the unique NZ terroir to transform its ancestral citrus into something far more exotic. This is a "new-wave" cultivar, precision-bred to meet the craft industry's obsession with high-oil, fruit-heavy aromatics. Tangerine Dream® is a specialist in biotransformation; its oils are uniquely suited to interact with active yeast to produce a "sticky-sweet" citrus character. For the brewer, it provides a professional-grade tool for achieving that elusive "juice-box" aroma that defines the modern craft movement.

Did you know?
  • Dwarf variety hops grow shorter in height than traditional varieties but, importantly, produce the same yield. This combination makes harvest easier.
Explanations
  • Storage: is based on the percentage of alpha acids remaining after 6 months at 20*F.
  • Oil composition percentages are based on the total percentage of oil in the hop. Example: 10 - 20% means that for the specific oil it is 10 - 20% of the overall oil make up.
