Idaho Gem

Idaho Gem is a true diamond in the rough, discovered as a wild seedling in the fertile soils of Gooding Farms in Wilder, Idaho. Named in honor of its home state, this proprietary variety has quickly earned a reputation for its massive oil concentration and an aromatic profile that captures the vibrant spirit of the American Northwest. While many high-alpha hops focus on aggressive resins, Idaho Gem prioritizes saturated fruit sweetness and "clean" aromatic clarity. It is a robust grower that perfectly embodies its local terroir, providing brewers with a versatile, high-impact ingredient that excels in everything from traditional West Coast IPAs to the most pillowy, tropical hazy ales. The profile of Idaho Gem is a luscious and saturated arrangement of red fruits and bright citrus. It leads with a dominant primary bouquet of cherry candy, candied orange peel, and pineapple, followed closely by a sophisticated secondary layer of sweet grapefruit and a whisper of herbal spice. Because of its remarkably low cohumulone levels and high myrcene content, it imparts a "smooth" fruit sensation on the palate that feels juicy rather than resinous. The bitterness is crisp and unobtrusive, acting as a transparent frame that allows the vivid, candy-like flavors to linger through a refreshing and bright finish. It is the definitive choice for brewers seeking a bold, fruit-forward hop that emphasizes sweetness, clarity, and immense drinkability.

Jarrylo

Jarrylo (pronounced Yar-i-lo) is a unique high-performance hop named after the Slavic god of fertility. Developed by the American Dwarf Hop Association and bred from a cross of Summit and the male plant ADHA 75-2 in 2008, it stands as a vibrant bridge between "Noble" sensibilities and "Craft" intensity. Though it carries a modern American pedigree, it provides a "springtime" freshness and complexity that is often compared to a "Super Saaz." It is a high-oil variety that thrives in delicate, yeast-forward styles where its unique fruit and spice characteristics can take center stage, offering an understated elegance that supports a beer's architecture without overwhelming it. The profile of Jarrylo is a sophisticated and bright arrangement of summer orchard fruits and noble spices. It leads with a primary bouquet of ripe pear, green apple, and sweet lemon zest, followed closely by a secondary layer of floral jasmine and a subtle, peppery earthiness. Unlike many high-oil hops that lean into heavy resins or dankness, Jarrylo remains remarkably "luminous" and crisp. On the palate, the bitterness is incredibly gentle, allowing the delicate stone fruit and citrus-blossom notes to linger through a dry, refreshing finish. It is the definitive choice for brewers seeking a nuanced, multi-dimensional hop that emphasizes clarity and fruit-forward elegance.

Julius

Julius is the definitive "terroir" hop of the American Midwest, a variety that proves Minnesota soil can produce world-class aromatic intensity. Originally championed by Mighty Axe Hops, this variety leverages unique regional soil chemistry and custom harvesting practices to transform its Cascade lineage into something entirely different. Named for its uncanny ability to replicate a bright, creamy, and zesty orange character, Julius prioritizes oil saturation and aromatic clarity over traditional bitterness. It represents a significant departure from the resinous, "dank" profiles of the West Coast, offering instead a sunny disposition that provides a professional-grade finish to modern, fruit-forward recipes. The profile of Julius is a vibrant and focused arrangement of sun-ripened citrus and sweet tropical fruit. It leads with a dominant primary bouquet of fresh-squeezed orange juice, tangerine, and sweet clementine, followed closely by a sophisticated secondary layer of mango, passionfruit, and a hint of vanilla cream. Unlike varieties that carry heavy pine or earthy undertones, Julius remains incredibly bright and breezy, emphasizing a clean, juicy sweetness that makes it a perfect fit for Hazy IPAs. On the palate, the bitterness is mild and exceptionally smooth, allowing the vivid citrus notes to remain the focal point through a refreshing, crisp finish that captures a classic "orange-cream" character.

Krush®

Krush® (formerly known as HBC 586) is a contemporary legend in the making, representing over a decade of intensive selection by the Hop Breeding Company. Officially released to the public in 2024, this variety was engineered to meet the highest professional standards, offering exceptional yields, disease resistance, and superior storage stability. It has quickly captivated the brewing world with its ability to provide a "total fruit" experience, effectively bridging the gap between the tropical punch of the Southern Hemisphere and the resinous power of the Pacific Northwest. It is the definitive choice for brewers who want to create flagship IPAs that stand out for their aromatic clarity, depth, and sheer "juiciness." The profile of Krush® is a breathtaking and complex arrangement of nearly every tropical fruit imaginable. It leads with a dominant primary bouquet of mango, guava, and lychee, followed immediately by a sophisticated secondary layer of sweet orange, grapefruit, and a distinct peppery "zing." Unlike many varieties that lean into a singular note, Krush® provides a multi-layered sensory experience that includes whispers of herbal[t/ag] [tag]pine and earthy wood. On the palate, it delivers a very clean, "electric" bitterness that supports a lush, jammy fruit sensation, resulting in a saturated, "high-definition" aromatic profile that remains bright and endlessly refreshing.

Luminosa®

Luminosa® is a breath of fresh air in the hop world, representing a conscious shift toward "clarity" of flavor. Bred by Shaun Townsend at Oregon State University in 2013, with Indie Hops Flavor Project, from a Sorachi Ace female, this proprietary variety was developed to strip away the heavy, resinous, and sulfurous "distractions" found in many modern cultivars. The name itself suggests light, and the hop delivers exactly that—a bright, radiant fruit expression that makes hop-forward beers feel remarkably refreshing and buoyant. It offers brewers a sophisticated, "uncluttered" aromatic profile that lacks the polarizing herbal drawbacks of its parentage, making it a standout choice for the next generation of Hazy and West Coast styles. The profile of Luminosa® is an uplifting arrangement of white-fleshed fruits and candied citrus. It leads with dominant notes of white peach and juicy guava, immediately followed by a distinct "orange Creamsicle" sweetness. Unlike many of its contemporaries, it avoids heavy pine or dank, onion-like undertones, instead offering a secondary layer of pink lemonade and elderflower. On the palate, it provides a silky, juice-like sensation with almost zero astringency, finishing with a "sunny," tropical-fruit pop that remains elegant, clean, and endlessly drinkable.

Opal

Opal is a standout jewel of German hop breeding, representing a sophisticated evolution of the classic Hallertau tradition. Developed by the Hüll Hop Research Institute in 2001 and released commercially in 2004, this variety was engineered to provide brewers with a more robust and aromatic alternative to heritage landrace hops. While it has faced a slower adoption rate in large-scale commercial breweries, it has become a "hidden gem" in the craft world. Opal distinguishes itself with an exceptionally low cohumulone content and a high concentration of linalool, resulting in a hop that is both technically superior and sensorially stunning—offering the structural integrity needed for crisp lagers and the aromatic complexity required for contemporary farmhouse ales. The sensory profile of Opal is an elegant and multi-layered arrangement of zesty fruit and refined herbal spice. It leads with a primary, "bright" bouquet of sweet orange, dried apricot, and lemon peel, followed by a sophisticated secondary layer of peppery spice and fresh wildflower honey. As the profile develops, brewers will find a pleasant herbal "snap" and a subtle hint of cedar that remains incredibly clean on the palate. Thanks to its balanced oil composition and lack of bitterness harshness, Opal delivers a polished, rounded bitterness and a crisp, effervescent finish. It is the definitive choice for brewers seeking a timeless "Noble" quality with a modern, fruit-forward twist.

Pacific Sunrise

Pacific Sunrise is a modern powerhouse that captures the absolute essence of the New Zealand hop revolution. While it was originally released by the HortResearch program in 2000, it has recently seen a significant resurgence in the craft market. Its complex pedigree—drawing from Cluster, Fuggle, and New Zealand male hops—allows it to function as a formidable dual-purpose variety. Whether used for its high-alpha bittering efficiency or its massive aromatic impact, Pacific Sunrise represents a fruit-forward juggernaut transformed by the unique New Zealand terroir. The sensory profile of Pacific Sunrise is a vivid and intense celebration of tropical sunshine. It leads with a primary, "juicy" bouquet of ripe melon, mango, and crushed pineapple, followed by a vibrant secondary layer of zesty lemon and sweet navel orange. As the profile develops, brewers will find a refined herbal "dankness" and a subtle [tag]floral/[tag] hint that provides a crisp, refreshing edge. Thanks to its exceptionally high oil saturation and firm alpha acid content, this hop shines in late-kettle, whirlpool, and dry-hop additions, delivering a bold, punchy bitterness and a lingering, candy-like fruit finish.

Sequoia

Sequoia is a high-impact proprietary blend from the BSG Hop Solutions Program, engineered specifically to deliver a quintessential West Coast character infused with modern tropical flair. While traditional varieties often offer subtle nuances, Sequoia was designed as a "saturated powerhouse," boasting an incredibly high total oil content intended to survive the heat of the whirlpool and the cold extraction of dry-hopping. It is a prized tool for brewers who need a reliable, high-performance option that can anchor a "juice-forward" recipe while providing the clean agricultural consistency expected from the world-class terroir of the Pacific Northwest. The sensory profile of Sequoia{ is a concentrated explosion of tropical and "red" fruit characteristics. It leads with a primary, "lush" bouquet of ripe mango, crushed pineapple, and sweet papaya, immediately followed by a vibrant surge of candied orange and grapefruit zest. As the profile develops, brewers will find subtle, modern "dank" undertones and hints of wild strawberry and forest berries. Because of its massive oil composition and well-balanced cohumulone levels, {Sequoia delivers a remarkably smooth bitterness that supports its heavy fruit-forward load, making it the definitive choice for creating succulent hop profiles without the harsh herbal or grassy notes of some high-alpha varieties.

Strisselspalt

Strisselspalt is the definitive aromatic soul of French brewing, a historic landrace variety that has been cultivated in the Alsace region for centuries. While it began appearing in records around 1855, it is a true European land variety—meaning it grew naturally and adapted perfectly to the unique terroir of the Rhine Valley. As one of the world’s most elite "Noble-style" hops, it is prized not for its bittering potential—which is remarkably low—but for its unparalleled aromatic elegance. Deeply tied to the soil and climate of Eastern France, Strisselspalt is a cornerstone of classic European styles like Bière de Garde and traditional Saisons. It remains a top choice for brewers who demand a refined, "old-world" character that provides a sophisticated alternative to traditional German Noble hops.

Sybilla

Sybilla is a premier Polish aroma variety that represents a sophisticated leap forward for traditional European brewing. Released in 1996, it was specifically bred at the Institute of Soil Science and Plant Cultivation in Puławy to bridge the gap between "Noble" heritage and modern agricultural resilience. Sybilla was born from a cross between the classic Polish Lubelski and a wild Yugoslavian male (likely a descendant of Savinjski Golding). This lineage grants Sybilla a prestigious European pedigree, allowing it to function as a high-performance replacement for Fuggle or Styrian Golding. It combines the delicate, spicy soul of Saaz-type hops with a more assertive aromatic intensity. As a cornerstone of Polish brewing, it is prized for its exceptional purity and its ability to add significant depth to both crisp, bottom-fermented Lagers and expressive, top-fermented Ales.

Symphony

Symphony is a precision-engineered aroma blend from the experts at Yakima Chief Hops, designed to deliver a massive, multidimensional fruit profile. Unlike single-varietal hops that can fluctuate with each harvest, Symphony is a curated "orchestra" of several high-oil varieties, balanced to ensure consistent performance year after year. It was developed using advanced sensory analysis and oil-retention data to focus specifically on "survivable" hop compounds. These are the molecular components—like linalool and geraniol—that are chemically rugged enough to withstand the heat of the brewhouse and the activity of fermentation to reach the final glass. For the brewer, Symphony represents a reliable, all-in-one solution for achieving the "saturated" tropical character required by the most demanding modern craft styles.

Yellow Sub

Developed by the flavor experts at the BarthHaas, in Germany, Yellow Sub is a masterfully composed "Hop Creation" designed to deliver high-impact aromatics with German precision. Rather than a single variety, Yellow Sub is a proprietary blend of elite German aroma hops meticulously selected to replicate the bold, fruit-forward profile of iconic New World hops like Amarillo®. For the brewer, Yellow Sub represents the ultimate in reliability. Because it is a blend, it bypasses the flavor fluctuations often found in single-farm harvests, offering a rock-solid, year-over-year consistency. It provides the "punch" of a Pacific Northwest hop while retaining the clean, refined brewing performance that is the hallmark of German hop science.

Zamba

Formerly known as Samba, Zamba is the flagship proprietary release from the BSG Hop Solutions Program. Unlike traditional single-variety hops, Zamba is a masterfully curated blend designed to take the guesswork out of brewing high-impact IPAs. By scientifically pairing specific cultivars, Zamba ensures that your beer delivers a consistent, high-intensity aromatic profile year-round, bypassing the natural flavor swings often found in single-hop harvests. It is essentially a "one-stop shop" for tropical complexity. Zamba was engineered to cut through heavy malt bills and high-gravity mashes, providing a reliable foundation for any brewer looking to achieve a "commercial grade" fruit-forward profile in their homebrewhouse.

Zenia

While its DNA belongs to the legendary Columbus / Tomahawk / Zeus (CTZ) hop family, Zenia is far from your standard bittering hop. Cultivated by the farmer-owned Mighty Axe Hops in Minnesota, this variety is a testament to the power of terroir and specialized processing. Unlike its ancestors, which are often picked early for raw bittering power, Zenia is harvested late and aged in climate-controlled environments. This deliberate "resting" period allows the pungent, sulfurous notes often found in high-alpha hops to fade away, leaving behind a refined and complex aromatic profile. The result is a uniquely American hop that bridges the gap between old-school "dank" characteristics and modern, fruit-forward intensity. Currently difficult to source following the closure of Mighty Axe Hops in 2020.

Zenith

Born from the legendary hop-breeding program at Wye College, United Kingdom in the 1970s, Zenith was released in 1987 as a solution for brewers needing power and poise. It was engineered to be a true "workhorse"; a hop that could provide high-alpha bittering efficiency without losing the soul of English aroma. What makes Zenith truly special, especially for home growers, is its armor. It boasts exceptional natural resistance to Downy and Powdery Mildew, making it one of the most reliable varieties to cultivate in your own backyard. Whether you’re looking for a smooth, foundational bitterness or a bright, citrusy finish, Zenith represents the pinnacle of British agricultural science.

Did you know?
  • Dwarf variety hops grow shorter in height than traditional varieties but, importantly, produce the same yield. This combination makes harvest easier.
Explanations
  • Storage: is based on the percentage of alpha acids remaining after 6 months at 20*F.
  • Oil composition percentages are based on the total percentage of oil in the hop. Example: 10 - 20% means that for the specific oil it is 10 - 20% of the overall oil make up.
