Speciation Cellars

Visited while on a business trip with my wife. Make sure you use GPS to find the place as it is behind another building. I like the old look to the building and then the beautiful ceiling once inside. Their brewing area is quite small for the barrel aging they are doing with the sours. Assume the same base for multiple beers, then add a twist once fermented. Had time for only a single beer, Magic Trait (had blackberries and black currants), but that beer is really good. I know it takes a while to make a sour but their beers definitely have a premium on them. A flight probably makes more sense. On a slow Monday, the bar tender only had another couple but was more worried about menial tasks than really attending to the few patrons. Wish for better service. The beer is really good and if this was closer, I would be there a lot. Unfortunately it is not. Step up the service and possibly they will be busier. Worth the stop if you are in the area. Enjoy!
