Can of Dovetail Maibock purchased at Flight Bottle Shoppe on 2021-06-10. Cannot make out the date on the bottom.
Pours with huge pristine white foam that consumes 90% of the glass. Great retention on the foam which becomes rocky and even meringue at times.
Lacing begins late: sporadic, thick, and wispy. Mild chill haze. Effervescent.
Aroma is subtle. Floral honey, sweet cracker (almost bready at times), with seemingly a fruitiness, and lager yeast.
Taste is sweet, light malts: pilsner, cracker, and thinly sliced white bread. Honey adds to the sweetness. But, like the aroma, nothing over the top.
Body is light plus. Lots of small carbonation up front that gives way but settles middle tongue. Juicy sweet but not cloying.
It has been a while since I have had a Maibock style beer. It has always signified the beginning of spring. When I noticed Dovetail Maibock I had to scratch the itch. Would like to see a bit more body and the carbonation knocked down a notch. Very drinkable and enjoyable. I would have this again. I need to find more beers in the style. Enjoy!
