Apolon Hops

Developed as seedling selection No. 18/57 in the early 1970s at the Hop Research Institute in Žalec, Slovenia, Apolon is a rare European cultivar bred by Dr. Tone Wagner. A cross between a high-alpha Brewer's Gold female and an unknown wild Yugoslavian male, it was engineered alongside its genetic sisters Ahil and Atlas to capture a higher alpha-acid potential while preserving a deeply rooted, old-world continental character. Upon its market entry, it was marketed under the "Super Styrian" umbrella, a designation meant to imply a higher-potency alternative to traditional, Fuggle-derived Styrian Goldings. However, because its true ancestry traced back to Brewer's Gold instead of Fuggle, the classification caused significant industry confusion, ultimately leading to very low acreage allotments and a steady decline in its regional footprint. Completely unrelated to the modern American variety Apollo, Apolon survives today as a prized, historical specialty hop celebrated by craft brewers for its unique blend of classic European elegance and high-alpha muscle.

The sensory architecture of Apolon is a distinctively bold, dual-faceted masterpiece that effortlessly bridges the gap between delicate continental restraint and rugged, high-potency oil dynamics. The aromatic canopy leads with an incredibly distinct, pungent top note of resinous pine needles, crushed botanicals, and broken forest twigs, driven heavily by an elevated concentration of myrcene oil. This intense, rustic introduction gives way across the palate to a highly structured, comforting mid-palate defined by dried garden herbs, sweet wildflowers, and mild woodsy spice. Thanks to its clean chemical layout and high-alpha bittering capabilities, Apolon functions as a fantastic dual-purpose asset in the brewhouse—imparting a remarkably smooth, uniform, and clean bitterness early in the kettle while throwing off a highly structured, refreshing, and beautifully nostalgic aroma when pushed late into the process.

Substitution Tip

If you can't find Apolon, the best alternatives are Brewer's Gold, Chinook, Northern Brewer, Styrian Aurora, or Target.
