Flavor & aroma

Developed and released by Hopsteiner’s proprietary breeding program, Altus (originally evaluated under the experimental designation #07270) is a powerhouse super-alpha cultivar engineered to bridge the gap between maximum brewhouse efficiency and robust, oil-heavy aroma delivery. Derived from a deliberate cross between the super-alpha giant Apollo and the classic English variety Wye Target, its name is rooted in the Latin adjective altum—meaning high, elevated, or a level above—which directly references its massive physical cone layout and exceptionally high concentration of alpha acids and essential oils. Agronomically, Altus is a vigorous, high-yielding plant with an excellent field architecture that offers exceptional dual-purpose utility. It has fundamentally challenged the traditional separation of bittering and aroma hops, allowing craft brewers to hit sharp bittering targets early in the kettle while simultaneously drenching the whirlpool in dense, oil-rich fractions.

The sensory architecture of Altus is a booming, heavy-hitting masterpiece that delivers a deeply structured, old-school aromatic display with modern West Coast intensity. The bouquet opens instantly with a dominant, pungent top note of dank wood resin, sticky pine sap, and sharp herbal kitchen spices. This deep, resinous foundation is beautifully brightened and lifted across the palate by a clean, delicate middle tier featuring soft tangerine citrus peel and crisp, fresh-cut field grass. Because its massive alpha-acid payload is paired with a highly complex essential oil matrix that handles heat beautifully, Altus functions as an elite brewhouse asset. It provides a incredibly clean, smooth bitterness when utilized in early boil additions, but truly commands the spotlight late in the process or in the dry hop, where its volatile oils coat the palate with a bold, refreshing, and deeply woodsy snap.

Substitution Tip

If you can't find Altus, the best alternatives are Apollo, Columbus, or Galena.
