Bouclier is a very new hopped that was bred at Comptoir Agricole in Alsace, France. Heritage of Strisselspalt and a male from Wye, Kent in the United Kingdom. This genealogy includes Challenger, Early Bird Golding, and Northern Brewer.

Bouclier has characteristics of spice: pepper, lovage, garlic, nutmeg, and ginger.
