Kohatu® Hops
AromaAlpha 6.0 - 7.0%New Zealand
Flavor & aroma
Kohatu® is a masterstroke of New Zealand hop breeding, offering an aromatic profile that captures the lush, sun-soaked spirit of the South Island. Released in 2011 by HortResearch (now Plant & Food Research), it features a lineage derived from Hallertau and a New Zealand male with North American and European parentage. Named after a small village near the hop-growing heartland—a name that means "stone" or "rock" in Māori—Kohatu was specifically selected to favor a "saturated fruit" experience over aggressive bitterness. It is a variety that prioritizes oil quality and aromatic clarity, providing a polished, professional-grade brightness that remains incredibly drinkable.
The profile of Kohatu® is a refreshing and breezy arrangement of tropical groves and summer orchards. It leads with a dominant primary bouquet of fresh pineapple[[tag]tag] and sweet [tag]lime zest, followed by a sophisticated secondary layer of crushed pine needles and ripe stone fruit. Unlike many Southern Hemisphere hops that can lean toward heavy "dankness," Kohatu® remains remarkably clean and airy, finishing with a silky, rounded mouthfeel. On the palate, the bitterness is exceptionally pleasant and well-rounded, allowing the bright tropical and citrus notes to shine through with a lush, thirst-quenching clarity.
If you can't find Kohatu, the best alternatives are Amarillo®, Cascade, Motueka™, or Wai-iti™.
